We are looking for a Food & Beverage Manager Asia Pacific, based in our Regional Office in Ho chi Minh City (Vietnam)!
MISSION
Reporting directly to the Director of Food & Beverage Asia Pacific, this position will be responsible for implementing the strategy, standards, attributes, products, and optimizing operational efficiency in the areas of Kitchen, Dining Room, Bars, and MICE for the hotels /operations centers under their responsibility.
MAIN RESPONSIBILITIES
- Responsible for implementing the F&B strategy in the hotels under responsibility and its implementation through standards in the hotels based on product, quality, and culinary direction.
- Responsible for the supervision of the operation of the hotels in the area of responsibility.
- Provides the operational vision of the destination to the F&B Hotel Services team for the creation of standards.
- Analysis of the competition and proposes trends and improvements to the F&B Hotel Services team.
- The role involves creating, analyzing, and acting upon the F&B P&L, ensuring compliance with the KPIs outlined in the budget/forecast for the hotels under their responsibility, alongside the F&B Partner and Business Partner.
- Support and reviews the F&B Forecast, ensuring its achievement in conjunction with the Revenue Management team.
- Prepares reporting on other KPIs related to the F&B function and monitors them according to the requirements of the hotels under their responsibility and Management Control.
- Sets prices for all centralized menus based on competition and segmentation of different hotels, following Corporate F&B guidelines and in collaboration with the distribution team and hotel management.
- Collaborates with the Sales department to define pricing and offerings for events, meeting rooms, and conferences.
- Conducts Comp Set studies for Development leads, aiding in the development of the F&B Business Plan for the project, aligned with the brand and destination of the asset.
- Responsible for using and training in digital tools to improve data quality in reporting.
- Responsible for implementing projects, programs, technological tools (REVO, COUPA, etc.), and processes for all hotels under responsibility.
- Responsible for monitoring and supporting pilots, tools, and processes to ensure proper pre-implementation and post-analysis.
- Identifies and proposes improvements, tools, or processes that enhance operational efficiency in their hotels and promote agile performance.
- Responsible for tracking incidents with suppliers.
- Handles operational communication between the hotel and the Procurement department.
- Together with TSA, responsible for tracking the critical path of construction, ensuring scope compliance, and adhering to the agreed-upon concept/layout.
- Responsible for reviewing and updating the critical path for openings.
- Responsible for maintaining customer satisfaction and reputation through the analysis of Quality data and the implementation of action plans if necessary.
- Responsible for reviewing F&B content on Digital Channels (including melia.com) alongside their Marketing Partners.
- Co-responsible, along with HR, for creating and ensuring compliance with the training plan for hotel teams.
- Proposes talented individuals for Development plans and is responsible for talent identification.
- Participates in the implementation of Food Safety regulations.
- Follows up of the results of HACCP (Hazard Analysis and Critical Control Points) audits.
- Participates in the implementation of the Company's Sustainability strategy.
REQUIREMENTS
- College level degree or equivalent Hotel Management or Tourism related education.
- Minimum 3 years managerial Food and Beverage experience.
- Excellent knowledge of International Hospitality Food & Beverage operations.
- Advance level of Vietnamese and English language required for both written and verbal communication.
- Strong leadership and interpersonal skills.
- High customer service orientation.
- Excellent organization skills.
- Ability to work under pressure.
- Proficient in Microsoft Word, Excel and PowerPoint.
