What's the job

  • Hygiene Officer is safety and health professional who inspects and supervises culinary operation to ensure that associates and the guests are protected from unsafe food handling practices and unsafe environmental conditions. The hygiene officer inspects workspaces and kitchen equipment to verify that it is safe, and study the effects that businesses have on the surrounding environment. A large part of the responsibility is document according to IHG Brand Standard Audit, HACCP and ISO22000 guidelines.
  • Assist the Cluster Hygiene Manager in implementing and managing the Food Safety Management System (BSA, ISO 22000) and supporting a safe and efficient hotel operation and therefore contribute to maximizing guest satisfaction consistent with hotel standards.
  • Assists in implementation of all issues related to safety. Demonstrates awareness of occupational & environmental health and safety policies. Conducts regular inspection of all areas & recommends corrective action measures to help protect workers from potentially hazardous work methods, processes, or materials. Conducts regular training in compliance with the training requirements as per IHG risk management policies.

Your day-to-day

People

  • Direct reporting to the Cluster Hygiene Manager all concerns regarding Food Safety, Sanitation, Pest Control in all kitchens and F&B outlets.
  • Responsible for hygiene related IHG's brand standard HACCP, ISO 22000 implementation through monitoring, coordination, assessment, verification and follow-up.
  • Ensure daily status expiration dates, labelling and proper storage procedures are in place according to the HACCP, ISO 22000 and IHG standards.
  • Perform internal audits and reports; report to Cluster Hygiene Manager in regards to plans and actions.
  • Assist the external auditing of vendors and products supply chain.
  • Ensure compliance with local legislation.
  • Conduct regular review of hygiene practices of all kitchen and food service associates and provide constructive feedback.
  • Actively involved in training associates in the fundamentals of proper inspection and sanitizing of equipment and food handling, storage and transportation, facilitates the hygiene courses, maintains the hygiene database.
  • Understands and communicates to staff the proper operating and maintenance procedures of all department equipment.
  • Perform hazard analysis and continual improvement in food safety.
  • Maintains and verifies records of all food safety documentation.
  • Develops and updates policies and manuals, as related to the division/department for the implementation in the field, while ensuring compliance to the same for consistency across the group.

Financial

  • Fully apply and supervise quarterly OE inventories.
  • Ensures correct techniques of all chemicals are used.
  • Security of all high value items in all areas at all times
  • Ensure associate practice and observe all safety rules and regulations.
  • Maintains purchasing, receiving and food storage standards and ensures necessary corrective actions in place regarding quality and safety of the products.

Responsible Business

  • All employees meet proper IHG standard of appearance.
  • Effective communication is maintained through active participation in associate departmental meetings and Food and Beverage meetings.
  • Conduct brain storming sessions on reduction of breakages/loss for the entire hotel. Work with respective departments together to achieve positive impact and results

Education: Graduated in College / Bachelor degree regarding food technology and biotechnology

Service years in the field:

  • Previous experience in a similar size organization
  • Professional in appearance well groomed.
  • Able to work with little supervision.
  • Very good communication and presentation skills
  • HACCP Certified
  • Must have an approachable disposition.
  • Must work quickly and safely
  • Computer literate and familiar with databases, spreadsheets for data analysis

Knowledge and skills:

  • Demonstrated ability to interact with customers, employees and third parties that reflects highly on the hotel, the brand and the Company.
  • Food service permit or valid health/food handler card as required by local government agency.
  • Problem solving, reasoning, motivating, organizational and training abilities.

Preferred (if required): Interacts with guests and individuals outside the hotel including, but not limited to, current and potential clients, owning company representatives, suppliers, competitors and other members of the local community.

Language: Good comprehension of the English language
