We are seeking a passionate Junior Pastry Sous Chef for our new store in Nha Trang, who will be responsible for all the operations in the store kitchen, ensuring pastry quality, safety, and consistency with MMV standards.
RESPONSIBILITY
1. Menu R&D:
- Create new dish for Special weekend and seasonal pastry
- Get approval from Executive Chef & release menu to all kitchen
2. Team training and management:
- Ensure a well-organised team in terms of scheduling, tasking and training
- Lead and motivate kitchen team to achieve KPIs
3. Quality control:
- Randomly check quality of the dishes everyday
- Give feedback to the team & find out the problem (if any)
- Ensure quality & details are being maintained
4. Food cost control:
- Collect production report & waste report in the kitchen end of the month
- Ensure goods transferring between each shop with correct numbers
5. Food hygiene & food safety control:
- Ensure staffs are well grooming
- Maintain cleanliness of kitchen
- Ensure staff do FIFO for production & ingredient
- Well prepare for inspection from authorities
6. Production planning:
- Do forecast production for any occasion
- Maintain good communication with another Sous-Chef about planning of each shop
7. Guest complaints handling:
- Master the procedure on how to deal with guests complaints
- Ensure guests satisfaction with the resolution
QUALIFICATIONS
- Strong Chef de Partie or previous Junior Sous Chef experience
- Good English skill
- Good communication skill
- Strong supervisory skill
- Approaches food in creative way
- Positive attitude
- Commited to delivering a high level of customer service
- Excellent planning and organizing skills
- Willing to learn & mobile
- Ability to work a variety of shifts including weekends
